Zuccini Cucumber salad
to post this for future references!
My mom has a kidney infection and we were getting some new recipes that were alkaline so her kidneys could rest! I came up with this delicious number with what I found in the fridge from the garden.
Let's see what shall I name it?
I shredded a huge zuccini
added 2 diced cucumbers
and 1 diced avocado
Then I cut the corn off 3 cobs of corn and added that.
I mixed it all together and added the popped pumpkin seeds on top
Then because I needed a little flavor, I made the oriental ginger sesame dressing to put on it.
Oriental Ginger Sesame dressing:
1/2 cup olive oil
2 Tbsp liquid amino acids
3 Tbsp honey
3 cloves garlic
pinch of salt
1/4 cup water
1 tsp sesame seed oil
1 tsp fresh grated ginger
blend in vitamix

Coconut Tropical Lemon Cookies
I have to put this down because we made them this morning and they are heavenly!
I adapted a recipe that I found and the results were awesome!
3 cups almond flour (I make mine by blending almonds in the blendtec until they are a powder, but you can buy it.)
1 1/2 cups coconut flakes
1 1/2 tsp salt
4 Tblsp honey, Pure Maple Syrup or Agave ( I used half honey half pure maple syrup)
4 Tbsp lemon juice
zest and juice of one lime
1 mango pureed
2 tsp vanilla
1/4 cup plus 1 Tbsp melted coconut oil
Mix all together, form balls, place in refridgerator until chilled.
